So, what’s an ox? In days of old, the term referred to a bovine male animal that is castrated (so as not to be distracted by any hottie heifers) and used for plowing and other farm work. Although most cattle these days aren’t usually used for labor, the name for their tail meat has stuck. Oxtail is a round(ish) cut made up of muscle and sinew with the tail vertebrae at the center. Cooked properly, it is one of the most flavorful cuts on the animal.

When cooked properly, Oxtail meat is soft and velvety. Because of the high amount of cartilage, bone and connective tissue, you’ll want to cook these cuts on a low heat setting for a long time. And we mean long. Overnight even. Because of the bone and cartilage, the cut lends a deep, rich flavor to soup stock or hearty stews. Slow cookers or pressure cookers are a good option, although braising in wine or another liquid also works.
