Also known as Pork Collar, the Coppa steak is the best boneless pork chop you never knew existed. Perhaps you’ve met Coppa in one of it’s alternate identities, Capicola or cured Coppa, but to know it, you’ve gotta spend time with it in front of the grill.

Coppa’s riddled ribbons of intermuscular fat keep it juicy and moist even using a quick cooking method, despite its origins in the shoulder. Sprinkle with salt and let the Coppa shine! Fire up your grill or favorite skillet for a hot sear, then lower your heat to finish it off. Basically, just treat it like a pork chop.

Each cooler will save over 100 cardboard boxes from being used.  For this to work, please return the cooler to us (AT OUR COST) within 3 business days.  Just slap on the provided label and drop it off at a Fed-Ex location or schedule a pick-up as described here.
