The Eye of Round should not be confused with the very similar-looking, yet wildly different, Tenderloin. It is a well-exercised muscle at the center, or the “eye,” if you will, of the round primal. Lean and with very little fat, it requires special care in preparation. Ever had the pleasure of tasting Bresaola on a charcuterie board? This is the muscle that the Italians have perfected for that tasty treat.

There are two Eye of Round per animal.

It takes several hours of cooking at a low temperature to get it tender. If you’ve ever wanted to try out the sous-vide method of cooking beef, this would be a good cut to try it out on. Think of it as a long bath for tense muscles, which is exactly what the Eye of Round needs to relax and become that pink and tender roast you’re craving. Dry roasting, low and slow, will yield the same results as long as you don’t overcook it. It also makes top-notch jerky.
