This underrated and often overlooked cut is more than worthy to be a regular and welcomed guest in your kitchen. Tough by nature, the Hocks and Shanks require time and patience, but we promise they are worth the wait. Braise, brine and smoke, confit or sous vide, they’re both versatile enough to star as the focal point of many dishes, and humble enough to take the back seat and share their essence with your soups and beans.

Looking to accomplish that smoky flavor in your soups and beans? The key is salt and smoke; brine them and let your smoker take it from there. Hocks and Shanks are also great substitute cuts for pulled pork; just let them smoke long enough to pull off the bone with ease. A low, slow and liquidy braise will also do the trick.
