If a steer were to take a deep breath in to, say, prepare to belt out the Star-Spangled Banner, it would engage its diaphragm, where the Hanger Steak or Hanging Tender is found. Taken from the plate on the upper belly, it is a V-shaped pair of muscles that literally hang between the ribs and the loin to support the rest of the diaphragm. There’s only one per animal though, so snatch it up while you can!

The Hanging Tender is the most tender cut of beef apart from the tenderloin and has the deepest, most beefy flavor of any cut on the steer. Similar in texture and flavor to Flank, Hanging Tender takes marinades well and is best grilled, broiled or cooked in a hot skillet to medium rare. Give it a try for tacos, fajitas, carne asada or even Korean bulgogi.
