A steer keeps it tight. Those hindquarter muscles of what’s known as the round primal, are well exercised and tend to be lean. As hard-working back leg muscles that keep the steer up and moving, they can make a tasty roast with a similar juicy flavor to the top sirloin, if treated properly.

There are 10-14 portioned Round Roasts per animal.

The Round has a bad rap for being too tough, but don’t let that scare you off. It can be made to be tender and more flavorful through proper preparation. An any-night kind of cut, it is most commonly used for roast beef because it’s economical, full of protein and there’s enough there to feed your whole crew and then some. Keep the temperature low and don’t rush cooking to prevent it from getting too chewy. Dry roast it, smoke it or put it in the slow cooker and then slice thin for best results.
