The London Broil is our steak representative of the leg. Cut to the perfect thickness from the muscle groups that make up the round primal, these leaner steaks are often criticized as “too dry and tough”. Don’t listen to the gossip, we’re here to tell you that then can be both juicy and tender with the proper preparation.

There are around 40 London Broils per animal.

HORMONE & ANTIBIOTIC FREE ▪ RAISED & DRY AGED IN TEXAS

Season liberally with salt and pepper then make yourself a cocktail and let the salt do it’s magic for at least an hour (you can also whip up a marinade and let them soak). Fire up your grill or skillet to medium high to achieve a good charred sear on both sides. But keep a close eye so as not to overcook - these steaks should be pulled off at medium-rare and then rested before serving. Top with a pad of butter and let your mouth water.
